A twist on a popular dish. Be it for breakfast, lunch or sometimes even dinner, this dish can be made even more special...it's what your lazy day deserves, easy but special.
Let's face it, sometimes there is no time for the long and elaborate. You just want easy, but also in a very comforting and satisfying way. This is one of those dishes. It makes an appearance on many Sunday mornings (or early afternoons when we finally roll out of bed). I have two ways of doing this; one way is with leftover smoked bacon and chorizo and the other is with some super tasty sausages. Both end in a winning messy plate of smokey goodness.

INGREDIENTS
- 1 can Baked Beans, 415g
- 2 smoked bacon rashers
- Few slices of chorizo (or) 3-4 sausages, chopped into big chunks
- 1/2 brown onion, finely sliced
- 2 tbsp olive oil
- 1 tbsp smoked paprika
- 1/2 tsp garlic granules
- 1/2 tsp sugar
- Handful spinach
- 3 basil leaves
- Salt to taste (be careful when using chorizo)
METHOD
1. Place a shallow pan or skillet over medium heat. Add oil and allow to heat up.
2. Add in your onions and sauté them, don't let them brown.
3. Add the bacon and cook through, turning regularly. Throw in your chorizo and allow that to cook and release some of its oils. ( If you are using the sausages, you can fry these off at this stage instead of the bacon and chorizo).
4. Add in your baked beans, spices and sugar and allow to simmer for about 5 minutes.
5. Depending on how much water your onions gave off, you may need a splash of water to ensure your beans isn't too thick.
6. Add spinach and basil and stir through till they soften slightly.
7. Serve piled on top of a buttered piece of toasted bread and enjoy.
