A spicy sausage pasta dish, a cracking mid-week quick dish.
As far as midweek pasta dishes goes, this really meets the brief. It takes very little time, yet there is no compromise on flavour. The nduja is punchy and rich and meaty, The mascarpone lends a creaminess to the dish, and you already know the importance of a little bit of sharpness the lemon brings to the dish. This pasta dish leaves very little to be desired. The fat content of the spicy sausage paste means it melts very easily and combines well with other ingredients to make a stunning sauce. As you cook it down, it releases such beautiful aroma and vibrant oil. The colour pay off is simply irresistible.

INGREDIENTS
- 2 tbsp olive oil
- 2 shallots, finely diced
- 2 garlic cloves, finely diced
- 1 tbsp honey
- 2 heaped tbsp nduja paste
- 1 tbsp mascarpone cheese
- Zest and juice of half a lemon
- Pasta of choice
METHOD
Put your pasta on a medium to high heat to boil
Soften the shallots and garlic in the olive oil. Do this on a medium to low heat, stir frequently to avoid the shallots from burning
Add the nduja paste and stir, allow it to cook for a couple of minutes, or until it starts to release its beautiful vibrant oil
Now add the mascarpone cheese into the nduja paste mixture, add a little splash of water (use your pasta water - your pasta should be boiling at this point), and stir till combined, creamy and vibrant
Drain the pasta (saving about a tablespoon of water), and add to the pasta sauce. Add the lemon juice. Stir to evenly coat the pasta
Serve topped with freshly grated lemon zest (and parmesan cheese for good measure).
