There are moments when you don't want to do too much with chicken, but still enough that it is flavourful and makes for a good quick meal. Lemon pepper chicken breasts is just that. It is vibrant and tasty, but requires little fuss.
It's another quick and easy recipe because I know how busy weeknights can be. With most ingredients likely to already be in your pantry, this dish can go from stove to dining table in 30 minutes.

INGREDIENTS
- 5 boneless chicken breasts
- 1 fresh lemons, 1 juiced and 1 sliced
- 2 tsp crushed black pepper
- 1/2 tsp paprika
- 2 garlic cloves - roughly chopped
- 150ml chicken stock
- 4 tbsp melted butter
- 1 tsp honey
- 2 tbsp olive oil
- Few sprigs of rosemary
METHOD
Preheat your oven to 180degrees
Lightly pound your chicken fillets using a mallet to flatten. This helps reduce cooking time.
Coat the chicken breasts evenly with paprika and 1/2 tsp of black pepper
Heat up your skillet to medium heat.
Add the olive oil to your skillet, and then sear the chicken till golden brown on both sides (2-3 mins both sides)
While the chicken is searing, in a separate bowl, mix together chicken stock, lemon juice, pepper, honey, garlic and melted butter.
Once the chicken breasts have a nice golden sear, cover them with half the seasoning mix, top with sliced lemons and rosemary and pop in the oven for about 15-20 minutes.
Keep basting chicken with remainder of the marinade mix while it’s cooking to keep the chicken nice and juicy.
Check to make sure it’s cooked through and then serve with rice, pasta, or bread. Make sure to serve with that buttery sauce.
