There is a certain magic that happens when you coat fruit in sugar and place it on top of a grill or griddle pan. Grilled peaches are a testament to that kind of magic. Grilled peaches is great paired with meats, excellent on top of porridge whether hot or cold, and certainly a welcomed sweetness in a summer salad. My favourite thing to do with it though, is to pair with something creamy - ice cream, yoghurt, creme fraiche - and add a little crunch with a crumb, amaretto biscuits or crushed nuts as a summer dessert.
Another great thing about them is that they lend well to quick, lazy cooking. You only need 3 ingredients...4 if you are feeling a little grown and sexy and want to add a dash of alcohol.
Preparation Time: 5 minutes
Cooking Time: 10 minutes

INGREDIENTS
- 6 peaches, ripe but still firm
- 3 tsp brown sugar
- 2 tsp cooking oil
- 2 tsp whiskey or rum (optional)
METHOD
1. Halve and pit the peaches by running a knife around the middle, twisting to separate and using a spoon to remove the pit.
2. Brush the peaches with some oil and sprinkle over some sugar. If you are using some alcohol, mix the sugar and alcohol together and coat your peaches in the mixture.
3. Place peaches flat side down onto a preheated grill on medium heat for about 5 minutes. A griddle pan works great, but if you are using a big outdoor grill, make sure you do this once the grill is just starting to cool down.
4. Flip peaches and cook till you have some char and the peaches are nice and soft.
