Fluffy Ricotta Pancakes

a recipe for the perfect fluffy pancakes for that special morning.

These pancakes and fluffy and indulgent, perfect for those extra special mornings. Even better part is that this recipe does not differ greatly from a standard pancake recipe so don't be put off. The key to this recipe is keeping the batter airy. The separate whisking of the egg whites is really key and you maintain that airiness by not overworking the batter once you've added in your egg whites. You also want to make sure your ricotta cheese isn't too wet - to avoid this, let it sit in a fine mesh strainer or muslin cloth over a bowl for 15-30 minutes to remove any excess liquid before using.

Cooking Time: 20 minutes

Servings: Makes 8 - 10 pancakes



INGREDIENTS

- 160g Ricotta cheese

- 75g self raising/all-purpose flour

- 100ml full fat milk

- 1 tsp baking powder

- 1 tsp vanilla extract

- 2 large eggs (room temperature)

- Pinch of salt

- 1/12 tbsp granulated sugar

- Butter for frying


METHOD

  1. Start by mixing together all the dry ingredients and set aside.

  2. Separate the egg white and egg yolks

  3. In a separate bowl, combine egg yolks, milk, vanilla extract, and ricotta cheese.

  4. Add the dry ingredients to the ricotta and milk mixture and stir to fully combine and set aside

  5. Now go back to the egg whites and whisk until it forms peaks and is stiff ( would not run if you tip the bowl upside down). I recommend using a hand mixer for ease but you can also do it by hand

  6. Gently fold in the egg whites into the pancake batter using a spatula, be careful not to overwork the batter - this will remove a lot of the air and flatten your pancakes.

  7. Heat a frying pan over medium heat, add some butter to the pan and allow to melt and bubble

  8. Use a ladle to scoop some of the batter onto the pan. Allow to cook on medium heat for about 3 minutes, or until you see some bubbles appear in the batter. Flip the pancake and cook on the other side for another 3 minutes, getting golden brown edges and fluffy centre pancakes.

  9. Repeat this step, try to scoop equal amounts into the pan, so you have a nice perfect stack of pancakes for serving.

  10. Serve with toppings of choice.
